Pork tenderloin “Stroganoff”

Cut strips of pork tenderloin. Half fried in butter and oil finely chopped onion. Remove the onion, add a little oil and fry half the meat. Remove the plate and, likewise, fried and other meat. Return meat to pan and pour in brandy. Cook over low heat until the alcohol evaporates. Add onions, cream and spices. Boil, sprinkle with parsley and served.

Pork cutlets with peaches

Fry diced bekon. Boil rice and turmeric. Put in the bacon, add parsley, cinnamon, black pepper and salt. Peel one peach and cut it to pieces. Add it to rice mixture along with egg. Make pockets in cutlets and put them with the mixture. Fried cutlets on both sides of butter in half. Put them in a baking tray. Reserve 2 tablespoons of pineapple juice and pour in the remaining cutlets. Cover pan with foil and bake in moderate oven. Put remaining oil in pan along with sugar and reserved pineapple juice. Heat until sugar is melted. Add peeled and finely sliced peach fruit and cook until soft and sauce is thickened and glazed. Add a little of the liquid in which fried chop, put the vinegar and cook another minute. Cutlets served with sauce.
