Chicken:
- 2 pounds boneless skinless chicken thighs
- 1 tablespoon minced garlic
- 1 inch ginger root, peeled and grated or 2 teaspoons ginger paste
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 tablespoons olive oil
Stew:
- 1 cup diced onion from about 1 medium onion
- 1 tablespoon tomato paste
- 3 cups water, divided
- 2 stock cubes (Maggi) About 4g per cube
- 3/4 cup natural peanut butter
- 4 oz mushrooms, sliced
- 1/4–1/2 cup frozen spinach, thawed and squeezed to remove excess water
Instructions
- Season chicken: Combine minced garlic, ginger, salt, and pepper with the chicken. Set aside.
- Sauté Mushrooms: Cook mushrooms in oil until browned. Remove from pan.
- Cook Chicken: Brown chicken in the same pan. Remove from pot.
- Sauté Onions: Cook onions until translucent, then add garlic, ginger, and tomato paste.
- Add Water and Stock Cubes: Stir in water, stock cubes, and salt. Simmer.
- Add Peanut Butter: Stir in peanut butter until combined. Add more water if needed.
- Add Back Chicken: Return chicken to pot and simmer.
- Add Veggies: Stir in mushrooms and spinach. Simmer briefly.
Notes
- For added spiciness, sprinkle red pepper flakes on the stew.
