Ingredients

Scale

Cake Ingredients

  • 1 cup Oil
  • 3/4 cup Brown Sugar
  • 3/4 cup Sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Unsweetened Applesauce
  • 1/4 cup Apple Cider
  • 2 1/2 cups Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg
  • 3 cups Peeled Chopped Apples (about 3 large)

Brown Sugar Glaze

  • 6 Tablespoons Butter
  • 1 cup Brown Sugar
  • 1/2 cup Heavy Cream

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F and grease a 9×13 baking pan with non-stick cooking spray to ensure the cake doesn’t stick.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly combined for balanced flavor and leavening.
  3. Combine Wet Ingredients: In a larger mixing bowl, stir together the oil, sugar, and brown sugar. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract for a smooth, uniform batter. Then stir in the applesauce and apple cider.
  4. Add Dry Mixture to Wet: Gradually add the dry ingredients to the wet mixture and fold together just until combined, making sure not to overmix.
  5. Fold in Apples: Gently fold the peeled and chopped apples into the batter, distributing them evenly throughout.
  6. Bake the Cake: Spread the batter evenly in the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. To avoid over-browning, cover the cake loosely with foil after 25-30 minutes of baking.
  7. Prepare Brown Sugar Glaze: While the cake cools, combine butter, brown sugar, and heavy cream in a saucepan over medium heat. Whisk constantly until butter melts and mixture comes to a boil. Boil for 1 minute, then reduce heat and cook for 1 more minute. Remove from heat and allow glaze to cool.
  8. Glaze the Cake: Once the cake has cooled slightly, poke holes all over the top using a toothpick or fork. Drizzle the brown sugar glaze over the cake, allowing it to soak in for a few minutes.
  9. Serve: Serve the apple fritter cake warm or at room temperature with vanilla bean ice cream or fresh whipped cream for an indulgent treat.

Notes

  • Recipe adapted from Mom’s church cookbook.
  • When baking, choose firm, sweet yet tart apples; a combination of Honeycrisp, Gala, Fuji, and Granny Smith apples works well for balanced flavor.
  • For this recipe, Honeycrisp apples were used, providing sweetness and a crisp texture.
