Seasonings
- 2-3 tsp kosher salt, divided use

Other Ingredients
- 156 mL tomato paste
- 2 19-oz cans black beans
- 2 19-oz cans kidney beans
- 4 cups diced tomato

Instructions
- Cook Onions: Heat olive oil over medium heat and cook the chopped onions until they turn golden, about 20 minutes, stirring occasionally to prevent burning and ensure even cooking.
- Add Garlic and Jalapeño: Stir in minced garlic and finely chopped jalapeño, cooking for an additional 1 minute until fragrant, releasing their distinctive aromas.
- Brown the Ground Beef: Add the ground beef to the pan and season with 1 teaspoon of kosher salt, black pepper, and chili powder. Cook thoroughly, breaking it up with a spoon, until the beef is no longer pink inside.
- Add Tomato Paste: Stir in the tomato paste and cook continuously for 2 minutes until it darkens slightly, enhancing its rich flavor.
- Add Remaining Ingredients: Pour in the black beans, kidney beans, diced tomatoes, water, and the remaining salt. Bring the mixture to a boil.
- Simmer: Reduce the heat to low, cover the pot, and simmer for at least 30 minutes or longer to allow the flavors to meld and the chili to thicken to a hearty consistency.
