Description

This Authentic Chili Con Carne recipe delivers a thick, hearty, and spicy ground beef chili rich with beans and deep flavors. Made on the stovetop, it combines perfectly cooked onions, garlic, jalapeño, and a robust chili powder blend, simmered with ground beef, tomato paste, beans, and diced tomatoes. Ideal for a comforting meal that’s full of robust flavor and satisfying texture.

Ingredients

Scale

Meat and Vegetables

  • 2 tbsp olive oil
  • 3 cups chopped onion
  • 6 cloves garlic, minced
  • 1 jalapeño, finely chopped
  • 2 lbs ground beef

Seasonings

  • 2-3 tsp kosher salt, divided use
  • 1/2 tsp black pepper
  • 3/4 cup chili powder (blend of spices, not ground red chile)

Other Ingredients

  • 156 mL tomato paste
  • 2 19-oz cans black beans
  • 2 19-oz cans kidney beans
  • 4 cups diced tomato
  • 3 cups water

Instructions

  1. Cook Onions: Heat olive oil over medium heat and cook the chopped onions until they turn golden, about 20 minutes, stirring occasionally to prevent burning and ensure even cooking.
  2. Add Garlic and Jalapeño: Stir in minced garlic and finely chopped jalapeño, cooking for an additional 1 minute until fragrant, releasing their distinctive aromas.
  3. Brown the Ground Beef: Add the ground beef to the pan and season with 1 teaspoon of kosher salt, black pepper, and chili powder. Cook thoroughly, breaking it up with a spoon, until the beef is no longer pink inside.
  4. Add Tomato Paste: Stir in the tomato paste and cook continuously for 2 minutes until it darkens slightly, enhancing its rich flavor.
  5. Add Remaining Ingredients: Pour in the black beans, kidney beans, diced tomatoes, water, and the remaining salt. Bring the mixture to a boil.
  6. Simmer: Reduce the heat to low, cover the pot, and simmer for at least 30 minutes or longer to allow the flavors to meld and the chili to thicken to a hearty consistency.
