Fresh Herb Blend:
- 2 cups chopped fresh parsley
- 1/4 cup chopped fresh chives
- 1/4 cup fresh basil leaves
Other Ingredients:
- 2 cloves garlic, peeled
- 1 medium/large ripe avocado
- zest from half a lemon (optional)
- 1/4 cup fresh lemon juice
- 1 1/2 tablespoons apple cider vinegar
- Up to 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1/4 to 1/2 cup water
Instructions
- Blend Fresh Herbs: In a food processor, combine parsley, chives, basil, and garlic. Pulse until chunky, about 5 seconds.
- Add Avocado Mixture: Add sliced avocado, lemon zest and juice, vinegar, salt, pepper, and ¼ cup water. Process until smooth. Add more water for a thinner consistency.
- Adjust Seasoning: Taste and adjust salt, pepper, and lemon to your liking. Serve immediately or store in an airtight container.
Notes
- Storage: Store dressing in the refrigerator in an airtight container for up to 4 days. The lemon juice and vinegar help prevent browning.
- Freezing: This dressing may be freezer friendly, but it’s best enjoyed fresh within a couple of days.
