Description

This Oil-Free Avocado Green Goddess Dressing is a vibrant and flavorful alternative to traditional dressings. Creamy avocado, fresh herbs, and zesty lemon make this dressing a perfect accompaniment to salads or as a dip.


Ingredients

Fresh Herb Blend:

  • 2 cups chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup fresh basil leaves

Other Ingredients:

  • 2 cloves garlic, peeled
  • 1 medium/large ripe avocado
  • zest from half a lemon (optional)
  • 1/4 cup fresh lemon juice
  • 1 1/2 tablespoons apple cider vinegar
  • Up to 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1/4 to 1/2 cup water

Instructions

  1. Blend Fresh Herbs: In a food processor, combine parsley, chives, basil, and garlic. Pulse until chunky, about 5 seconds.
  2. Add Avocado Mixture: Add sliced avocado, lemon zest and juice, vinegar, salt, pepper, and ¼ cup water. Process until smooth. Add more water for a thinner consistency.
  3. Adjust Seasoning: Taste and adjust salt, pepper, and lemon to your liking. Serve immediately or store in an airtight container.

Notes

  • Storage: Store dressing in the refrigerator in an airtight container for up to 4 days. The lemon juice and vinegar help prevent browning.
  • Freezing: This dressing may be freezer friendly, but it’s best enjoyed fresh within a couple of days.
