Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
Wet Ingredients
- 6 tablespoons cold butter
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 (6 ounce) container vanilla yogurt
Fruit
- 1 cup peeled and chopped apple (about 1 large apple)
- 1/2 cup peeled and shredded apple (about 1 small apple)
Glaze
- 2 cups powdered sugar, divided
- 1/3 cup apple cider
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Lightly spray two mini muffin pans with non-stick cooking spray to ensure easy removal of the fritters.
- Mix Dry Ingredients and Cut in Butter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Using a pastry blender or two knives, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Combine Wet Ingredients: In a small bowl, whisk together the egg, vanilla extract, and vanilla yogurt until smooth and well combined.
- Form Batter: Pour the yogurt mixture into the flour and butter crumbs and stir until fully incorporated. Gently fold in the peeled, chopped apple and the shredded apple to evenly distribute them throughout the batter.
- Fill Muffin Cups and Bake: Spoon a few teaspoons of batter into each prepared muffin cup, filling them partially. Bake in the preheated oven for about 15 minutes or until the tops just start to brown lightly.
- Prepare to Broil and Transfer Fritters: Remove the fritters from the oven and switch the oven setting to broil on high. Line two cookie sheets with parchment paper. Carefully transfer the baked fritters onto the lined cookie sheets.
- Make and Apply First Glaze: In a small bowl, whisk together 1 cup powdered sugar and 4 tablespoons apple cider until the mixture is very thin. Brush this glaze over each fritter generously, letting it drip down the sides.
- Broil to Caramelize Glaze: Return the cookie sheets with glazed fritters to the oven under the broiler. Broil for 2 to 4 minutes, rotating the pans every minute to ensure even caramelization. Watch carefully to prevent burning; the glaze should bubble and caramelize but not blacken.
- Apply Second Glaze and Set: Remove the fritters from the oven. Whisk together the remaining powdered sugar with the leftover apple cider glaze until smooth and thicker in consistency. Brush this thicker glaze evenly over the broiled fritters. Let them set on the parchment-lined cookie sheets until the glaze hardens, about 15 minutes.
Notes
- Store leftover fritters in the refrigerator in an airtight container.
- Reheat in the microwave for 15-20 seconds or in an oven preheated to 350°F for 5-10 minutes for best texture.
- Watch the fritters closely during broiling to avoid burning the delicate glaze.
