Description

These Baked Peanut Chicken Wontons are a deliciously crunchy and flavorful appetizer featuring tender rotisserie chicken, fresh coleslaw mix, and crunchy peanuts wrapped in crispy baked wonton wrappers. Paired with a creamy, tangy peanut dipping sauce with a hint of spice, they offer a perfect balance of textures and tastes that make a crowd-pleasing snack or party treat.

Ingredients

Scale

Wontons

  • 2 tbsp canola oil
  • 1 cup diced rotisserie chicken
  • 1 cup coleslaw mix (found near the lettuce)
  • 1 tbsp peanuts, chopped
  • 30 wonton wrappers

Sauce

  • ¼ cup creamy peanut butter
  • ¼ cup seasoned rice vinegar
  • 2 tbsp soy sauce
  • Pinch crushed red pepper

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit. Lightly brush a baking sheet with some canola oil without using it all up. You may need a second baking sheet for all the wontons.
  2. Prepare the filling: In a mixing bowl, combine the diced rotisserie chicken, coleslaw mix, and chopped peanuts. Stir well to combine and set aside.
  3. Make the sauce: In a separate bowl, whisk together the creamy peanut butter, seasoned rice vinegar, soy sauce, and crushed red pepper until the mixture is smooth and well blended. Reserve most of the sauce for dipping.
  4. Mix the filling with sauce: Add 3 tablespoons of the prepared peanut sauce into the chicken mixture and stir thoroughly to coat all the ingredients evenly.
  5. Assemble the wontons: Divide the filling evenly among the wonton wrappers. Moisten the edges of each wrapper with water, fold diagonally to form triangles, and press the edges firmly to seal.
  6. Prepare for baking: Arrange the sealed wontons on the oiled baking sheet(s). Brush the tops with the remaining canola oil to help them crisp up.
  7. Bake the wontons: Bake in the preheated oven for 8-12 minutes, turning the wontons once midway through baking, until they are golden brown and crispy.
  8. Serve: Remove the wontons from the oven and serve warm with the reserved peanut dipping sauce on the side.

Notes

  • Make sure to seal the edges of the wontons tightly to avoid any filling leaking during baking.
  • If you prefer a spicier sauce, increase the crushed red pepper amount to taste.
  • You can substitute coleslaw mix with finely shredded cabbage and carrots if coleslaw mix is unavailable.
  • For a gluten-free option, use gluten-free wonton wrappers and tamari in place of soy sauce.
  • Use a light brush of oil on the baking sheet to help achieve a crispy texture without frying.
