Oat Mixture:
- 1 cup old-fashioned rolled oats
- 1 overripe banana
- 2 eggs
- 1/2 cup unsweetened almond milk or milk of your choice
- 2 tablespoons honey or sweetener of choice
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
Toppings:
- 1/4 cup mini chocolate chips

- Preheat oven to 350 degrees:

Prepare the oven for baking.
In a high-speed blender, combine all ingredients except chocolate chips and blend until smooth.
Evenly distribute the mixture and chocolate chips into four ramekins.
Bake for 25 minutes until the tops are puffed and lightly golden.
Allow the baked oats to cool for at least five minutes before serving warm or at room temperature.
Notes
- These can also be cooked in the air fryer at 300 degrees for 10-12 minutes.
