Instructions
- Preheat and prepare pan: Arrange a rack in the center of the oven and preheat to 350°F (175°C). Grease an 8-inch round pan with cooking spray to prevent sticking.
- Make the chicken filling: In a medium bowl, combine shredded chicken, buffalo wing sauce, mayonnaise, and kosher salt. Mix until all ingredients are well incorporated.
- Prepare biscuit dough: Flatten each biscuit round with your fingers until approximately 1/4 inch thick. This makes it easier to encase the filling securely.
- Fill and shape biscuit bombs: Spoon about 1 tablespoon of the chicken mixture into the center of each flattened biscuit round. Sprinkle evenly with Monterey Jack cheese and optional blue cheese. Carefully gather edges of dough and pinch seams tightly to form a ball. Place the balls seam side down in the prepared pan, spacing them evenly.
- Prepare ranch butter and glaze dough: In a small bowl, mix melted butter with ranch seasoning. Brush this mixture generously over the tops of the biscuit balls.
- Bake first phase: Bake in the preheated oven for 10 to 12 minutes until the biscuits begin to turn golden brown.
- Glaze again and finish baking: Remove pan from oven and brush the biscuits again with the ranch butter mixture. Return to oven and bake for an additional 5 minutes or until biscuits are thoroughly toasted and golden brown on top.
- Serve: Transfer the biscuit bombs to a serving platter. Serve warm with ranch and blue cheese dressings on the side if desired.
