A hearty and flavorful Chicken Bacon Ranch Potato Skillet featuring tender seasoned chicken, crispy air-fried potatoes, savory bacon, and melted mozzarella cheese topped with creamy ranch dressing. This comforting dish combines the smoky flavors of bacon and the zing of ranch seasoning in a quick skillet meal perfect for weeknight dinners.

Ingredients

Scale

Potatoes

  • 4 medium/large potatoes, washed and cut into cubes
  • Olive oil, as needed for tossing
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken & Bacon

  • 2 chicken breasts, cut into cubes
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 6 strips of bacon

Other

  • 1 cup shredded mozzarella cheese
  • Ranch dressing, for topping

Instructions

  1. Prepare the potatoes: Wash and cube the potatoes. Place them in a large bowl and toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Set aside.
  2. Air fry the potatoes: Preheat the air fryer to 400°F (200°C). Place the cubed potatoes in the air fryer basket in a single layer and cook for 20-25 minutes. Shake the basket a couple of times during cooking to ensure even crispiness.
  3. Cook the bacon: While the potatoes cook, chop the bacon strips into bite-sized pieces. In a skillet over medium-high heat, cook the bacon until crispy. Remove the cooked bacon from the pan and set aside, leaving about 2 tablespoons of bacon grease in the skillet.
  4. Cook the chicken: Add the cubed chicken to the skillet with the bacon grease. Season the chicken with salt, pepper, paprika, and dry ranch seasoning. Cook the chicken over medium-high heat until fully cooked and no longer pink inside. Remove the skillet from the heat.
  5. Combine ingredients: Once the potatoes are done, add them to the skillet with the chicken. Stir well to combine everything evenly.
  6. Add cheese and bacon: Sprinkle the shredded mozzarella cheese over the chicken and potato mixture. Top with the cooked bacon pieces.
  7. Melt the cheese: Place the skillet under the oven broiler for 2-3 minutes just until the cheese melts and bubbles. Alternatively, cover the skillet with a lid and let it sit on the stove over low heat until the cheese melts.
  8. Serve: Spoon portions onto plates and drizzle each serving with ranch dressing. Enjoy your Chicken Bacon Ranch Potato Skillet warm!

Notes

  • You can use any variety of potato, such as Yukon Gold or Russet, for best results.
  • If you don’t have an air fryer, roast the potatoes in a 425°F oven for 25-30 minutes, stirring halfway.
  • Adjust seasonings according to your taste preference, especially the spice levels.
  • For a lower-fat option, you can substitute turkey bacon and reduce the cheese amount.
  • Use fresh ranch dressing or your favorite bottled brand to complement the flavors.
