Instructions

  1. Season and Dredge Chicken: Season the chicken strips with sea salt and black pepper. Coat both sides with all-purpose flour evenly.
  2. Sauté Chicken: Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add chicken strips in batches—do not overcrowd the pan—and sauté until golden brown on the outside. The chicken does not need to be fully cooked at this stage. Transfer browned chicken to a 13×9 inch casserole baking dish.
  3. Cook Mushrooms and Onions: To the same skillet, add the remaining 3 tablespoons of olive oil. Add the thickly sliced mushrooms and diced onions and sauté until softened and golden. Add minced garlic and cook for another 1-2 minutes until fragrant. Spread this mixture evenly over the chicken in the baking dish.
  4. Prepare the Sauce: In a medium saucepan or the same skillet, melt unsalted butter over medium heat. Whisk in 3 tablespoons of flour and cook for 1-2 minutes until lightly golden to form a roux. Gradually whisk in chicken broth, lemon juice, and 1/4 teaspoon black pepper until smooth.
  5. Add Dairy and Simmer: Stir in half and half and bring the sauce to a gentle simmer. Season generously with salt and additional pepper to taste. Remove from heat.
  6. Assemble and Bake: Pour the creamy sauce evenly over the chicken and mushroom mixture in the casserole dish. Cover the dish tightly with aluminum foil and bake in a preheated oven at 350°F (175°C) for 45 minutes.
  7. Serve: Once baking is complete, serve the Chicken Gloria warm or hot over mashed potatoes, pasta, or rice for a satisfying meal.
