Potatoes:
- 1 1/2 pounds baby potatoes, washed (creamer potatoes)
Seasoning:
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper (adjust to taste)
- 2 tablespoons minced fresh dill, extra to garnish
- 1/2 lemon (or about 1 1/2 tablespoons juice)
Instructions
- Preheat oven: Preheat the oven to 425°F.
- Toss potatoes: On a rimmed baking sheet, toss potatoes with olive oil, salt, pepper, and dill.
- Roast: Roast for 15 minutes, stir, and continue to roast for 10 additional minutes, or until potatoes are crispy on the outside and fork-tender on the inside.
- Finish: Squeeze lemon juice over potatoes and garnish with additional dill. Serve hot.
Notes
- For extra crispy potatoes, leave them in the oven a bit longer. Watch closely so they don’t burn.
