Pumpkin Butter:
- 4 cups pumpkin puree (canned or homemade)
- 1/2 cup real maple syrup
- 3 teaspoons fresh lemon juice
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Add all the ingredients to a medium saucepan with a lid (keep the lid off right now). Stir everything thoroughly and turn the heat to medium-high. Once the pumpkin mixture starts to bubble, set the lid on the pan at an angle to allow steam to escape.
- Turn the heat down to medium-low and cook, stirring occasionally, for 20-25 minutes or until the pumpkin puree has thickened to your desired consistency. Adjust heat as needed to maintain a gentle bubble.
- Cool completely, transfer to a container with a tight-fitting lid, and store in the fridge. Enjoy!
Notes
- Use a medium-sized saucepan for the listed ingredients. For larger batches, opt for a bigger pot to prevent splattering.
- Avoid canning this pumpkin butter due to low acid content. Store in the fridge for up to two weeks or freeze for up to 3 months.
