For the Firecracker Sauce:
- 1/2 cup peanut butter
- 1/3 cup low sodium soy sauce
- 1/3 cup sesame oil
- 1/4 cup rice vinegar
- 2 tablespoons chili paste (like sambal oelek, add more for extra spiciness)
- 2 tablespoons sugar
- 1 small knob of fresh ginger, peeled
- 1 clove of fresh garlic, peeled
For the Lettuce Wraps:
- 1 block extra firm tofu, pressed and cut into small pieces
- 4 ounces brown rice noodles, soaked
- 1 head butter lettuce
- 1/2 cup peanuts
- 1/2 cup cilantro
- 1 lime
Instructions
- Noodle Prep: Soak the noodles in lukewarm water for at least 30 minutes.
- Sauce: Blend all sauce ingredients until smooth.
- Tofu: Sauté tofu in a skillet until golden brown. Add half of the sauce and cook until crispy.
- Noodles: Stir-fry noodles with the remaining sauce until coated.
- Lettuce Wrap It Up: Fill lettuce leaves with noodle-tofu mixture, top with peanuts, cilantro, lime, and more sauce.
Notes
- If you prefer a gluten-free option, use tamari instead of soy sauce.
- For a different protein, try using cooked chickpeas or tempeh.
