  • 1/3 cup low sodium soy sauce
  • 1/3 cup sesame oil

  • 2 tablespoons sugar
  • 1 small knob of fresh ginger, peeled
  • 1 clove of fresh garlic, peeled

For the Lettuce Wraps:

  • 1 block extra firm tofu, pressed and cut into small pieces
  • 4 ounces brown rice noodles, soaked
  • 1 head butter lettuce
  • 1/2 cup peanuts
  • 1/2 cup cilantro
  • 1 lime

Instructions

  1. Noodle Prep: Soak the noodles in lukewarm water for at least 30 minutes.
  2. Sauce: Blend all sauce ingredients until smooth.
  3. Tofu: Sauté tofu in a skillet until golden brown. Add half of the sauce and cook until crispy.
  4. Noodles: Stir-fry noodles with the remaining sauce until coated.
  5. Lettuce Wrap It Up: Fill lettuce leaves with noodle-tofu mixture, top with peanuts, cilantro, lime, and more sauce.
