Salad
- 5–6 cups arugula and spinach mix
- 8–10 oz Burrata cheese torn into bite-size pieces
- 2 large peaches sliced
- 8 slices prosciutto
- 6–8 leaves fresh basil
- 2 tbsp pine nuts
- 3–4 cup cherry tomatoes cut in half
Dressing
- 1/2 cup olive oil extra virgin
- 1/4 cup white wine vinegar
- 1 tsp lemon juice
- 1 tbsp Dijon mustard
- 1–2 tbsp honey
- 2 tsp shallots finely diced
- 1 clove garlic minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Salad: Remove the Burrata cheese from the fridge and allow to sit for 20 minutes. Arrange arugula and spinach on a platter. Top with cherry tomatoes, peaches, prosciutto, burrata cheese, pine nuts, and fresh basil. Drizzle with dressing.
- Dressing: Combine all dressing ingredients in a blender or bowl. Blend for 10-15 seconds or whisk until well combined. Store any leftover dressing in the fridge.
Notes
- If fresh burrata is unavailable, fresh mozzarella can be used as a substitute.
- Build the salad on a platter for easy serving and sharing.
- Leftover dressing can be refrigerated and used for other dishes.
