This Garlic Parmesan Crockpot Chicken and Potatoes recipe combines tender chicken breasts and flavorful potatoes slow-cooked to perfection in a creamy garlic parmesan sauce. Seasoned generously with Italian herbs, garlic, and spices, then topped with melted mozzarella cheese, this comforting, easy-to-make meal is perfect for busy days when you want hearty homemade food with minimal effort.

Ingredients

Units Scale

For the Potatoes:

  • 5 medium-sized potatoes, cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

For the Chicken:

  • 1 lb chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover chicken
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the Potatoes: Wash and cube the potatoes into even pieces. Spray the inside of the crockpot with cooking spray to prevent sticking. Place the cubed potatoes inside and drizzle with olive oil. Sprinkle salt, pepper, garlic powder, and paprika over the potatoes and stir well to coat them evenly with the seasoning.
  2. Season the Chicken: Cut the chicken breasts into cubes and place them in a bowl. Season with salt, pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and then pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly.
  3. Cook in the Crockpot: Add the seasoned chicken on top of the potatoes in the crockpot. Cover with the crockpot lid and cook on low heat for about 6 hours, or until the potatoes are tender and the chicken is cooked through. Stir the contents occasionally to ensure even cooking and flavor distribution.
  4. Add Cheese: Once cooked, sprinkle 1 cup of shredded mozzarella cheese evenly over the chicken and potatoes. Close the lid and let the cheese melt for a few minutes before serving.
  5. Serve: Serve the hot Garlic Parmesan Chicken and Potatoes directly from the crockpot. Optionally, you can top each serving with ranch dressing for extra flavor.

Notes

  • Feel free to adjust the seasonings according to your taste preferences for a milder or spicier dish.
  • Ensure the potatoes are evenly coated with olive oil and seasonings to maximize their flavor after slow cooking.
  • Check the chicken for doneness before serving to be sure it is cooked through safely.
  • You can substitute mozzarella cheese with Parmesan or a blend of Italian cheeses for variation.
  • If you do not have Buffalo Wild Wings Garlic Parmesan Sauce, you can make a homemade garlic parmesan sauce using butter, garlic, cream, and parmesan cheese.
