Truffle Base

- 1 tsp vanilla extract
Coating and Toppings
- 250g (8 oz) white chocolate chips or melting wafers, for coating

Instructions
- Crush the Cookies: Place the gingerbread cookies in a food processor and pulse until they become fine crumbs. Alternatively, seal them in a zip-top bag and crush using a rolling pin until finely ground.
- Make the Dough: In a large bowl, mix together the crushed cookies, softened cream cheese, cinnamon, nutmeg, cloves, and vanilla extract until fully combined, forming a soft and sticky dough. Using clean hands helps achieve a smooth texture.
- Roll into Balls: Scoop about 1 tablespoon of dough and roll between your palms to form small balls. Arrange the truffles on a parchment-lined baking sheet. Repeat until all mixture is used, making about 20–24 truffles.
- Chill the Truffles: Refrigerate the truffle tray for at least 30 minutes or freeze for 15 minutes to firm up before coating.
- Melt and Dip: Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Use a fork to dip each chilled truffle into the melted chocolate, allowing excess to drip off. Place back on the lined tray and add optional toppings while the chocolate is still wet.
- Let Set: Allow the chocolate to harden at room temperature or refrigerate to speed up setting. Once fully set, the truffles are ready to serve or store.
