Meat and Seasonings
- 1 pound grass-fed ground beef such as Moink
- 1/4 teaspoon salt
Vegetables and Aromatics
- 1/2 medium onion, diced
- 3 cloves garlic, minced
- 3 tablespoons freshly minced ginger
- 1 head green cabbage (about 10–12 cups shredded)
Sauces and Oils
- 2 tablespoons tamari or gluten-free soy sauce
- 1/4 teaspoon red pepper flakes
- 1 teaspoon sesame oil
Optional Garnish
- Green onion, chopped (for garnish)
- 1 cup uncooked brown rice
- 2 cups water
For serving: Brown Rice
Instructions
- Prepare the Rice: Add 1 cup of uncooked brown rice and 2 cups of water to a pot, bring to a boil, then reduce to a simmer. Cover and cook for about 40 minutes until tender. Remove from heat without lifting the lid and let steam for 10 minutes. Fluff with a fork before serving.
- Cook the Beef: Heat a large skillet or wok over medium-high heat. Add the ground beef, season with salt, and cook until browned, breaking it apart with a spatula. If using extra lean beef, you may need to add a teaspoon of oil to prevent sticking.
- Sauté the Onions: Once the beef is mostly browned, add the diced onions and sauté for about 5 minutes until they soften and become translucent.
- Add Aromatics: Stir in the minced garlic and ginger and cook for about 30 seconds until fragrant.
- Add Cabbage and Seasonings: Add the shredded cabbage, soy sauce, and red pepper flakes to the skillet. Stir well and cook uncovered, stirring occasionally, until the cabbage is wilted and soft, about 5-7 minutes.
- Finish and Serve: Remove from heat, drizzle with sesame oil, and sprinkle with chopped green onions. Serve hot over the cooked brown rice.
Notes
- Add extras like mushrooms, snow peas, carrots, or bean sprouts for more variety.
- Use pre-cut coleslaw mix for a quicker version, skipping the chopping of cabbage.
