Dip Base
- 1 16-ounce can refried beans
- 8 ounces cream cheese (softened)
- 8 ounces sour cream (divided)
- 2 tbsp taco seasoning
- 1 12 ounce container tomato salsa (or 16 ounce container)
- 2 cups shredded cheddar cheese
Tortilla Tombstones
- 4 soft flour tortillas (small)
- 1 tbsp olive oil
- Salt & pepper to taste
Garnishes
- ½ cup black beans (drained and rinsed)
- ½ cup green onions (chopped)
- ½ cup cilantro (chopped)
- ½ cup assorted cherry tomatoes (halved)
Instructions
- Prepare the dip base: In a mixing bowl, combine the refried beans, softened cream cheese, half of the sour cream, and taco seasoning. Mix thoroughly until smooth and well blended to create a creamy, flavorful base.
- Layer the salsa and cheese: Spread the tomato salsa evenly over the bean mixture. Sprinkle the shredded cheddar cheese generously on top of the salsa layer to add richness and color.
- Make the tortilla tombstones: Preheat the oven to 375°F (190°C). Cut the small flour tortillas into tombstone shapes using a knife or cookie cutter. Brush the tortilla pieces with olive oil and season with salt and pepper.
- Bake the tortilla tombstones: Place the tortilla tombstones on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-12 minutes or until they are crispy and golden brown. Remove and set aside to cool slightly.
- Heat the dip: Transfer the layered dip to a baking dish if not already assembled in one. Bake the dip in the same oven for 15-20 minutes until the cheese is melted and bubbly.
- Garnish and assemble: Once baked, remove the dip from the oven. Sprinkle the chopped green onions, cilantro, black beans, and halved cherry tomatoes evenly over the top. Arrange the crispy tortilla tombstones around or on the dip to complete the Halloween theme.
- Serve: Allow the dip to cool slightly before serving. Serve with additional tortilla chips or use the tombstones to scoop and enjoy this festive taco dip.
