Description

This Instant Pot Sausage and Potato Casserole is a hearty and flavorful dish that is quick and easy to prepare. Tender potatoes, savory kielbasa sausage, and melted cheddar cheese come together in a creamy sauce for a satisfying meal.

Potato Mixture:

  • 1 1/2 lb (700g) fresh diced potatoes
  • 1 lb (450g) kielbasa sausage, cut into small pieces
  • 1 small onion, diced
  • 1/2 tablespoon unsalted butter, diced

Cheese Sauce:

  • 2 1/2 cups shredded cheddar cheese
  • 1 1/2 to 2 cups (500ml) chicken or vegetable stock
  • 1/2 cup (125ml) milk
  • 1/4 cup (60ml) heavy whipping cream
  • 2 or 3 garlic cloves, minced, optional
  • 1 teaspoon Italian seasoning, optional
  • 1/2 teaspoon Cayenne pepper, optional
  • Salt and pepper, to taste

Instructions

  1. Prepare Potato Mixture: Combine diced potatoes, kielbasa sausage, onion, and butter in the Instant Pot.
  2. Make sure to use a large Instant Pot to avoid the ‘burn’ notice.

  3. Make Cheese Sauce: In a separate bowl, mix chicken stock, milk, heavy cream, garlic, Italian seasoning, Cayenne, salt, and pepper.
  4. Combine Ingredients: Pour the cheese sauce over the potato mixture and mix well. Sprinkle shredded cheese on top.
  5. Cook: Set Instant Pot to stew for 8-10 minutes until potatoes are cooked through.
  6. Be cautious not to overcook the potatoes. For a crispy top, broil the casserole in the oven for 2 minutes.
