Potato Mixture:
- 1 1/2 lb (700g) fresh diced potatoes
- 1 lb (450g) kielbasa sausage, cut into small pieces
- 1 small onion, diced
- 1/2 tablespoon unsalted butter, diced
Cheese Sauce:
- 2 1/2 cups shredded cheddar cheese
- 1 1/2 to 2 cups (500ml) chicken or vegetable stock
- 1/2 cup (125ml) milk
- 1/4 cup (60ml) heavy whipping cream
- 2 or 3 garlic cloves, minced, optional
- 1 teaspoon Italian seasoning, optional
- 1/2 teaspoon Cayenne pepper, optional
- Salt and pepper, to taste
Instructions
- Prepare Potato Mixture: Combine diced potatoes, kielbasa sausage, onion, and butter in the Instant Pot.
- Make Cheese Sauce: In a separate bowl, mix chicken stock, milk, heavy cream, garlic, Italian seasoning, Cayenne, salt, and pepper.
- Combine Ingredients: Pour the cheese sauce over the potato mixture and mix well. Sprinkle shredded cheese on top.
- Cook: Set Instant Pot to stew for 8-10 minutes until potatoes are cooked through.

Make sure to use a large Instant Pot to avoid the ‘burn’ notice.
