Description

This Jalapeno Popper Chicken Soup is a creamy and flavorful twist on traditional chicken soup, with the spicy kick of jalapenos and the richness of cream cheese and cheddar. Perfect for cozy nights or when you’re craving something hearty and comforting.


Ingredients

Bacon:

4 slices raw bacon, chopped

Vegetables:

1/2 sweet or white onion, diced
2 ribs celery, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
4 jalapeno peppers, seeded and chopped

Other:

1/4 cup all-purpose flour
3 cloves garlic, minced
3 cups low-sodium chicken broth
1 cup half-and-half
2 cups shredded cooked or rotisserie chicken breast
4 ounces cream cheese, softened
2 cups shredded sharp cheddar cheese


Instructions

  1. Cook Bacon: In a Dutch oven, cook chopped bacon until crisp. Transfer to a paper towel-lined plate.
  2. Saute Vegetables: Saute onions, celery, bell peppers, and jalapenos in bacon grease until tender.
  3. Add Flour: Sprinkle flour over veggies, add garlic, and stir until thick.
  4. Add Broth: Slowly add broth and half-and-half, bring to a boil.
  5. Melt Cheeses: Whisk cream cheese in hot broth, then add cheddar until melted.
  6. Combine: Stir in chicken and bacon, reserving some bacon for topping.
  7. Serve: Ladle into bowls and garnish with toppings.

Notes

  • If using jalapeno slices as garnish, reserve some before chopping for the soup.
