Ingredients
Bacon:
4 slices raw bacon, chopped
Vegetables:
1/2 sweet or white onion, diced
2 ribs celery, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
4 jalapeno peppers, seeded and chopped
Other:
1/4 cup all-purpose flour
3 cloves garlic, minced
3 cups low-sodium chicken broth
1 cup half-and-half
2 cups shredded cooked or rotisserie chicken breast
4 ounces cream cheese, softened
2 cups shredded sharp cheddar cheese
Instructions
- Cook Bacon: In a Dutch oven, cook chopped bacon until crisp. Transfer to a paper towel-lined plate.
- Saute Vegetables: Saute onions, celery, bell peppers, and jalapenos in bacon grease until tender.
- Add Flour: Sprinkle flour over veggies, add garlic, and stir until thick.
- Add Broth: Slowly add broth and half-and-half, bring to a boil.
- Melt Cheeses: Whisk cream cheese in hot broth, then add cheddar until melted.
- Combine: Stir in chicken and bacon, reserving some bacon for topping.
- Serve: Ladle into bowls and garnish with toppings.

- If using jalapeno slices as garnish, reserve some before chopping for the soup.
