Perfect for a quick, satisfying meal, it features simple ingredients and a straightforward cooking process that yields crispy browned potatoes and browned sausage infused with garlic, paprika, and herbs.
Ingredients
Scale
Sausage
- 16 oz. kielbasa sausage
Vegetables and Seasonings
- 1 ¼ pounds potatoes (approximately 5 medium-sized), chopped
- 1 Vidalia onion, chopped
- 1 clove garlic, minced
- ½ tsp. paprika
- ⅓ tsp. Kosher salt
- ¼ tsp. oregano or Italian seasoning
Instructions
- Preheat Skillet: Heat a skillet over medium-high heat to prepare for frying the kielbasa.
- Cook Kielbasa: Slice the kielbasa sausage and add it to the hot skillet. Stir frequently as it fries and browns, rendering its fat and developing rich flavor, about 6 minutes.
- Prep Vegetables: While the kielbasa cooks, chop the onion and potatoes into bite-sized pieces.
- Remove Kielbasa: Take the browned kielbasa out of the skillet and set it aside, leaving the sausage grease in the pan to cook the potatoes.
- Cook Potatoes: Add the chopped potatoes to the skillet with the kielbasa grease. Sprinkle with paprika, salt, and oregano. Stir to coat evenly, then reduce heat to medium or medium-low. Cover and cook, stirring regularly, for about 13 minutes until the potatoes begin to brown and soften.
- Add Onions and Garlic: Add the chopped onions and minced garlic to the potatoes. Cover again and continue cooking for about 12 minutes, stirring regularly, until onions are softened and fragrant.
- Combine and Finish: Return the kielbasa slices to the skillet with the potatoes and onions. Mix well and cook everything together uncovered for another 4 minutes to meld the flavors and heat through.
Notes
- A great time-saving tip is to microwave the potatoes until nearly tender before frying, which reduces overall cooking time.
- Adding peppers is a popular variation that complements the flavors well.
- Serving this dish with a fresh salad or cooked greens balances the meal nicely.
