Sauce
- 1 (15-ounce) container whole-milk ricotta
- ¾ cup freshly grated Parmesan cheese (plus more for serving)
- ¼ cup olive oil
- 2 garlic cloves
- 1 lemon (zest and juice)
- ½ teaspoon salt (plus more for pasta water)
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes

- 1 (5-ounce) container baby spinach
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and return it to the pot, covered to keep warm.
- Prepare Sauce: In a high-speed blender, combine the ricotta, grated Parmesan, olive oil, garlic cloves, lemon zest and juice, salt, black pepper, and crushed red pepper flakes. Blend for 1 to 2 minutes until the sauce is very smooth and creamy.
- Toss Pasta with Sauce and Spinach: Add the ricotta sauce, ½ cup of the reserved pasta water, and the baby spinach to the pot with the cooked pasta. Place the pot over low heat and gently cook, stirring until the pasta absorbs some of the sauce and the spinach wilts, about 2 minutes. Add additional pasta water as needed to reach your preferred sauce consistency.
- Serve: Dish the pasta onto plates and top with extra freshly grated Parmesan cheese if desired. Serve immediately.
