Description

These Maple Dijon Roasted Carrots are a delicious and easy side dish that’s perfect for any meal. The sweet and tangy glaze elevates the humble carrot into a gourmet treat.


Ingredients

    Carrots:

  • 2 pounds carrots, well scrubbed or peeled
  • Glaze:

  • 2 tablespoons oil
  • 2 tablespoons maple syrup
  • 1/2 tablespoon grainy mustard
  • 1/2 tablespoon dijon mustard
  • 1/2 tablespoon white miso paste (gluten-free for gluten-free)
  • 1/2 tablespoon rice vinegar
  • 2 teaspoons soy sauce (or tamari for gluten-free)
  • 1 small clove garlic, grated
  • 1 tablespoon parsley, chopped (optional)

Instructions

  1. Toss the carrots: In half of the mixture of the oil, maple syrup, mustards, miso, vinegar, soy sauce, and garlic. Arrange in a single layer on a baking sheet.
  2. Bake: Preheat oven to 400F/200C and bake for 20-30 minutes until tender and lightly golden brown, turning halfway through.
  3. Coat with remaining glaze: Toss the roasted carrots in the remaining glaze and serve.

Notes

  • You want young carrots, thin and about 3/4 of an inch or less, for quick roasting.
  • If you can’t find miso, you can omit it for great results.
