Easy Greek Chicken
- 1 lb chicken breasts, about 2 large breasts
- 1/2 cup Greek dressing
Rice Bowls
- 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups of cooked white rice
- 1 (15.5 oz) can chickpeas
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki
- 1/4 cup hummus
Instructions
- Marinate the chicken: Place the chicken breasts in a bowl or container, pour the Greek dressing over top, coat both sides, cover, and refrigerate for at least 1 hour, ideally overnight.
- Prepare the rice: Cook Success Boil-in-Bag White Rice as per package instructions. Set aside.
- Cook the chicken: Air fry at 400°F for 12-15 minutes or bake at 400°F for about 20 minutes.
- Assemble the bowls: Divide rice into four bowls, add chicken, chickpeas, cucumber, tomatoes, red onion, hummus, tzatziki, and feta cheese. Drizzle with extra Greek dressing if desired.
- Serve and enjoy!
