Instructions

  1. Preheat and melt butter: Preheat the oven to 375°F (190°C). Place the cubed butter into a 9×13 inch baking dish and put it into the oven for about 10 minutes, allowing the butter to melt completely.
  2. Prepare the batter: In a mixing bowl, stir together the flour, ¾ cup brown sugar, baking powder, cinnamon, and kosher salt. Add the milk and vanilla extract and mix gently just until combined, being careful not to overmix.
  3. Toss the peaches: In a separate bowl, toss the peach wedges with the remaining ¼ cup brown sugar and 2 tablespoons of maple syrup, ensuring the peaches are evenly coated.
  4. Assemble the cobbler: Remove the baking dish with melted butter from the oven. Layer half of the tossed peaches evenly over the melted butter. Pour the batter over the peaches carefully, do not stir. Then, layer the remaining peaches on top of the batter.
  5. Bake the cobbler: Bake in the preheated oven for 50-55 minutes, or until the center is just set and the edges of the cobbler begin to brown lightly.
