For the dish
- 20 oz fresh cheese tortellini
- 1 lb ground mild Italian sausage
- 2 TBSP olive oil
- 1/2 red onion, diced
- 2 large garlic cloves, minced
- 4 cups baby spinach, ribboned or torn
- 1 cup chicken broth, more if needed
- Pinch of sea salt
- Cracked black pepper
- 1/4 cup freshly grated Pecorino Romano or Parmigiano-Reggiano
- 1 lemon, zested and juiced
Instructions
- Heat the oil: Warm the olive oil in a large skillet over medium-high heat until shimmering.
- Sauté onions: Add diced red onion and cook for about two minutes until softened and fragrant.
- Add garlic and sausage: Incorporate the minced garlic and ground sausage; cook until the sausage is mostly browned, breaking it into crumbles with a spatula, about 5 minutes.
- Add broth and tortellini: Stir in the chicken broth and nestle the tortellini into the sausage and broth mixture. Bring to a gentle simmer, then reduce heat and cover the skillet.
- Cook the tortellini: Allow the tortellini to steam and absorb flavors for approximately 4 minutes or as indicated on the package.
- Wilt the spinach: Remove the lid, then stir in the spinach, cheese, and lemon zest. Cook for another 1-2 minutes until the spinach wilts.
- Finish the dish: Remove from heat and stir in fresh lemon juice, cracked black pepper, and extra grated cheese if desired. Serve immediately.
Notes
- Adjust the amount of chicken broth for desired sauce consistency.
- Use fresh tortellini for best texture; frozen works as well but may require slightly longer cooking.
- For extra flavor, add red pepper flakes or chopped herbs like basil or parsley.
- This meal is best served immediately, but leftovers can be stored in an airtight container for up to 1 day.
