  • 1/2 lb. penne pasta (uncooked)
  • 15 oz. fire roasted diced tomatoes (with juices)
  • 2 cups chicken broth
  • 2 oz. cream cheese
  • 3 green onions, sliced

Instructions

  1. Prepare Cajun Seasoning and Chicken: In a small bowl, mix together the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt to create the Cajun seasoning. Place the chicken cubes in a bowl and toss with the seasoning until well coated.
  2. Cook Chicken: Heat olive oil and butter in a large deep skillet over medium-high heat until the butter is melted and foamy. Add the seasoned chicken and sear for a couple of minutes on each side until the chicken is lightly browned but not fully cooked through.
  3. Sauté Onion: Add the diced yellow onion to the skillet and sauté for about 2 minutes until it begins to soften. Use the moisture released by the onion to loosen any browned bits stuck to the bottom of the skillet.
