  • 1 cup Dark brown sugar (or light brown sugar)
  • 1 cup Unsalted butter
  • 1 tsp Vanilla extract
  • 2 tsp Ground cinnamon, divided

Topping

  • 3 tbsp Granulated sugar
  • 3/4 tsp Kosher salt


Instructions

  1. Prepare Baking Sheet: Preheat the oven to 350°F (175°C). Line an extra-large rimmed baking sheet with aluminum foil and then parchment paper to prevent sticking.
  2. Arrange Crackers and Mix Topping: Spread the oyster crackers in a single, even layer on the prepared baking sheet. In a small bowl, combine 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt. Set this cinnamon sugar mixture aside for topping later.
  3. Make Toffee Mixture: In a small heavy-bottomed saucepan, melt the unsalted butter and dark brown sugar over medium heat. Bring it to a boil, then allow it to boil for 2 minutes while stirring occasionally to ensure the sugar dissolves and the mixture thickens slightly.
  4. Flavor the Toffee: Remove the saucepan from heat and stir in the vanilla extract along with the remaining 1 teaspoon of ground cinnamon, mixing thoroughly to combine all the flavors.
  5. Coat Crackers: Pour the warm toffee mixture evenly over the oyster crackers on the baking sheet. Gently toss or stir with a spatula to coat all the crackers thoroughly in the cinnamon-toffee glaze.
