- 2 flour tortillas
- 1 teaspoon butter
- ⅔ cup shredded mozzarella cheese (divided)
- 2 tablespoons pizza sauce
- 6 slices pepperoni (sliced in half)
- 2 fresh basil leaves (sliced thin, optional)
Instructions
- Preheat and Prepare Pan: Preheat a large non-stick skillet over medium-high heat. Lightly butter one side of each tortilla using about ½ teaspoon of butter per tortilla.
- Assemble Quesadilla: Place one tortilla butter side down in the hot skillet. Sprinkle ⅓ cup of shredded mozzarella cheese evenly over the tortilla. Spread 2 tablespoons of pizza sauce on top of the cheese, add the sliced pepperoni and thinly sliced basil leaves if using. Sprinkle the remaining mozzarella cheese over the toppings.
- Top and Cook: Cover the fillings with the second tortilla, butter side up. Let cook undisturbed for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
- Flip and Finish Cooking: Carefully flip the quesadilla over using a spatula. Continue cooking until the cheese is fully melted and the second tortilla is crisp and browned around the edges, about 2 more minutes.
- Serve: Transfer the cooked quesadilla to a cutting board while still hot. Cut into wedges and serve immediately for best flavor and texture.
