Description

A refreshing and naturally sweet strawberry sorbet made with just a few simple ingredients. This easy no-churn recipe uses frozen strawberries, sugar or an alternative sweetener, and lemon juice for a bright, tangy flavor. Perfect for a light dessert or palate cleanser, it’s dairy-free and can be made vegan-friendly with the choice of sweetener.

Ingredients

Scale

Main Ingredients

  • 3 cups strawberries (360g), stemmed and frozen
  • 1/4 cup sugar of choice (pure maple syrup, white sugar, xylitol, etc.)
  • 2 tsp lemon juice or zest of 1 lemon
  • Optional pinch of salt

Instructions

  1. Prepare Strawberries: Remove the stems from the strawberries. If they are fresh, freeze them until solid before proceeding.
  2. Blend Ingredients: Using a high-speed blender like a Vitamix, combine the frozen strawberries, your choice of sugar, lemon juice or zest, and optional pinch of salt. Blend until the mixture reaches a smooth sorbet texture.
  3. Alternate Method: If using a regular blender and the strawberries are too hard, allow them to thaw slightly to soften. Blend until combined, then transfer to an ice cream machine and churn according to the manufacturer’s instructions to achieve the sorbet consistency.
  4. Serve: Once smooth and creamy, serve immediately or freeze briefly to firm up further before enjoying.

Notes

  • Use fully ripe strawberries for the best flavor and natural sweetness.
  • Adjust sweetness to taste depending on the sweetness of your strawberries and choice of sweetener.
  • Maple syrup adds a unique flavor, while xylitol is a good low-calorie alternative.
  • The pinch of salt enhances the overall flavor but is optional.
  • This sorbet is naturally vegan and dairy-free.
  • If you don’t have an ice cream maker, blending in a high-speed blender works well to get a creamy texture.
