  • 2 tablespoons corn starch

Instructions

  1. Prepare the chicken: Cut the chicken breasts into ½ to ¾ inch cubes. Place them in a large zip-top bag and add 3 tablespoons of corn starch. Shake or toss until the chicken pieces are evenly coated in corn starch.
  2. Brown the chicken: Heat a large skillet over high heat and add 2 tablespoons of canola oil. Once the oil is hot, add the coated chicken pieces in a single layer, giving space between pieces. Cook until lightly browned on each side, working in batches if necessary to avoid overcrowding.
  3. Transfer to slow cooker: Place the browned chicken pieces into a 2.5 to 4-quart slow cooker.
  4. Make the sauce: In a bowl, whisk together honey, low sodium chicken broth, fresh lemon juice, soy sauce, salt, black pepper, and 2 tablespoons of corn starch until well combined.
