Soup:

  • 600 grams carrots, sliced
  • 150 grams red lentils
  • 1.5 liters vegetable stock
  • 1 handful fresh coriander, chopped

Instructions

  1. Heat the oil: In a pot over medium heat, sauté the onion until soft. Add garlic and sauté for another minute.
  2. Add spices: Stir in coriander, cumin, chili, turmeric, and ginger; cook for 1 minute.
  3. Cook soup: Add carrots, lentils, and stock. Simmer for 25 minutes until tender.
  4. Blend: Use a hand blender to puree the soup until smooth.
  5. Finish: Stir in coriander, season with salt and pepper.
  6. Serve: Ladle into bowls and garnish as desired.
