Main Ingredients:
- 1 1/2 pounds shrimp, peeled and deveined
- 1 tablespoon canola oil
Veggies:
- 2 garlic cloves, minced
- 2 shallots, chopped
- 3 Thai chili peppers, seeded and chopped
Additional:
- Juice of one lime
- 2 egg whites
- 1/2 cup Panko bread crumbs
- 2 green onions, chopped (green parts only)
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the Oven: Heat the oven to 350℉.
- Prepare Shrimp Mixture: Chop shrimp in a food processor. In a bowl, combine shrimp, egg whites, bread crumbs, green onion, cilantro, salt, and lime juice.
- Prepare Veggies: Sauté garlic, shallots, and chili peppers until translucent. Let cool.
- Combine Ingredients: Mix veggies into the shrimp mixture.
- Form Shrimp Balls: Shape mixture into 1-inch balls on a baking sheet sprayed with cooking spray.
- Bake: Bake for 15-17 minutes, then broil for 2 minutes until golden brown.
- Serve: Enjoy with sweet chili sauce!

- Thai chili peppers are very hot, remove the seeds and use gloves when handling.
- Food processor makes chopping shrimp easier.
