- 1 Tbsp corn starch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp red pepper
Sweet Chili Sauce
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1-2 Tbsp honey
Garnish
- 1 lime, sliced
- 3 Tbsp green onions, chopped
Optional Vegetables (for baking)
- Bell peppers, sliced
- Jalapeños, sliced
Instructions
- Preheat the oven: Preheat your oven to 375ºF to prepare for baking the chicken.
- Prepare the chicken: Cube the chicken breasts into 1-inch pieces. Toss them with corn starch, black pepper, salt, and red pepper to evenly coat and season the chicken.
- Bake chicken and vegetables: Arrange the seasoned chicken cubes on a baking sheet along with sliced bell peppers and jalapeños. Bake for 20 minutes at 375ºF, flipping the chicken pieces halfway through to ensure even cooking and browning.
- Make sweet chili sauce: In a saucepan, melt butter over medium heat. Add the minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, combining well. Allow the sauce to heat through and slightly thicken.
- Combine sauce with chicken: Once the chicken is cooked through, pour the warm sweet chili sauce over it and toss to coat all pieces evenly.
- Serve: Serve the sweet chili chicken hot over cooked rice or a fresh salad. Garnish with chopped green onions and lime slices for a bright and fresh finish.
