Chicken and Marinade
- 1 pound chicken breast, cut into bite-sized pieces
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
Vegetables
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
Cooking and Garnish
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions
- Marinate Chicken: In a bowl, combine sweet chili sauce, soy sauce, and cornstarch. Add the chicken pieces and toss well to coat evenly. Let the chicken marinate for 15 minutes to absorb the flavors.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook for about 7-10 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through inside. Remove the chicken from the skillet and set it aside.
- Sauté Vegetables: In the same skillet, add minced garlic and ginger, stirring briefly to release their aroma. Then add the sliced bell pepper and broccoli florets. Sauté the vegetables for 5-7 minutes until they are tender but still crisp.
- Combine: Return the cooked chicken to the skillet with the vegetables. Pour any remaining marinade over the chicken and vegetables. Cook everything together for an additional 2-3 minutes, stirring often, until the dish is heated through and the sauce slightly thickens.
- Serve: Transfer to serving plates and garnish with sesame seeds and sliced green onions. Serve hot, ideally over steamed rice or noodles for a complete meal.
Notes
- You can adjust the sweetness by adding more or less sweet chili sauce to your taste preference.
- Serve the dish over steamed rice, jasmine rice, or noodles to make it more filling and balanced.
- For extra heat, add a pinch of red pepper flakes or fresh chili slices.
- Ensure the chicken pieces are evenly sized so they cook uniformly.
