Instructions
- Add the frozen pineapple chunks, pineapple juice, and cream of coconut to a blender and puree until smooth – about 30 seconds on high speed. Serve immediately garnished with a wedge of pineapple.
Notes
- This recipe can easily be scaled up for as many drinks as you need, making about 16 ounces, enough for 1-2 people depending on glass size.
- Enjoy the drinks immediately as they will melt if left standing. If too thin, re-blend with ice.
