Zucchini Fries:
- 2 large zucchini, cut into matchsticks
Breading Mixture:
- 2 large eggs
- 2 cups panko bread crumbs
- 1/2 cup finely grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the oven: Heat the oven to 200C/400F and line a baking sheet with parchment paper.
- Prepare zucchini: Cut zucchini into matchsticks. Whisk eggs in a bowl. In another bowl, mix breadcrumbs, parmesan, salt, and pepper.
- Coat zucchini: Dip zucchini in eggs, then coat with breadcrumb mixture. Place on the baking sheet.
- Bake: Bake for 22-25 minutes, turning occasionally for crispiness.
- Serve: Remove from oven and serve hot.
