Description

Zucchini Fries:

  • 2 large zucchini

Egg Mixture:

  • 2 large eggs

Coating:

  • 2 cups panko bread crumbs
  • 1/2 cup parmesan cheese, finely grated
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 200C/400F. Line a baking sheet with parchment paper.
  2. Prepare Zucchini: Slice zucchini into matchsticks. Whisk eggs in a bowl. In another bowl, mix breadcrumbs, cheese, salt, and pepper.
  3. Coat Zucchini: Dip zucchini in egg, then coat with breadcrumb mixture. Place on baking sheet.
  4. Bake: Bake for 22-25 minutes, turning occasionally for crispiness.
  5. Serve: Remove from oven and serve hot.
