Zucchini Fries:
- 2 large zucchini
Egg Mixture:
- 2 large eggs
Coating:
- 2 cups panko bread crumbs
- 1/2 cup parmesan cheese, finely grated
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the Oven: Preheat the oven to 200C/400F. Line a baking sheet with parchment paper.
- Prepare Zucchini: Slice zucchini into matchsticks. Whisk eggs in a bowl. In another bowl, mix breadcrumbs, cheese, salt, and pepper.
- Coat Zucchini: Dip zucchini in egg, then coat with breadcrumb mixture. Place on baking sheet.
- Bake: Bake for 22-25 minutes, turning occasionally for crispiness.
- Serve: Remove from oven and serve hot.
Notes
- Leftover fries can be refrigerated for up to 5 days.
- To reheat, use an oven, air fryer, or pan.
